Ingredients

Apple Fritters

  • Canola oil

  • 2 tablespoons unsalted butter, divided

  • 2 large (8 ounce each) Honeycrisp apples, peeled and chopped into about 1/4-inch pieces (about 2 1/2 cups)

  • 1 1/2 cups (about 6 3/8 ounces) all-purpose flour

  • 1 1/2 teaspoons baking powder

  • 1 teaspoon kosher salt

  • 1/4 teaspoon ground ginger

  • 1/3 cup granulated sugar

  • 1/4 cup whole milk

  • 1/4 cup apple cider

  • 1 teaspoon vanilla extract

  • 1 large egg

Cider Vinegar Glaze

  • 1 1/3 cups (about 5 1/3 ounces) powdered sugar

  • 1 tablespoon whole milk

  • 2 teaspoons apple cider vinegar

  • 1/2 teaspoon vanilla extract

  • 1/4 teaspoon ground ginger

Direction

  1. Prepare the Apple Fritters

    Pour oil into a large Dutch oven to a depth of 2 inches. Heat over medium to 360°F, reducing heat as necessary to maintain temperature.

  2. While oil preheats, melt 1 tablespoon of the butter in a small saucepan over medium. Add chopped apples; cook, stirring occasionally, until softened but not browned, about 12 minutes. Remove from heat, and let cool slightly, about 10 minutes.

  3. Whisk together flour, baking powder, salt, and ginger in a medium bowl; set aside. Melt remaining 1 tablespoon butter in a medium heatproof bowl. Add sugar, milk, cider, vanilla, and egg; whisk until smooth. Add flour mixture to milk mixture, and whisk until just combined. Fold in cooked apples.

  4. Line a baking sheet with a wire rack, and set aside. Working in batches of about 4 fritters at a time, scoop about 1/4 cup batter using 1 metal spoon, and slide into hot oil by pushing off with another metal spoon. Fry until golden brown on both sides, about 3 minutes total, flipping once halfway through cooking time. Remove fritters from hot oil using a slotted spoon or spider; transfer to wire rack-lined baking sheet, and let cool slightly.

  5. While fritters cool, prepare the Cider Vinegar Glaze

    Stir together powdered sugar, milk, cider vinegar, vanilla extract, and ginger in a medium bowl until smooth. Drizzle over warm fritters, and serve immediately.
