Ingredients

  • salsa:
  • 1 fresh small pineapple, chopped
  • 4 plum tomatoes, chopped
  • 1/2 medium sweet red pepper, chopped
  • 1/2 sweet orange pepper, chopped
  • 1/2 small red onion, chopped
  • 1 jalapeno pepper, seeded and chopped
  • 1/3 cup fresh cilantro leaves, chopped
  • 1 lime, zested and juiced
  • chicken:
  • 3 to 4 boneless skinless chicken breasts
  • 1/2 cup chicken broth
  • 1/4 cup fresh pineapple juice
  • 2 teaspoons minced garlic
  • Salt and pepper to taste
  • Cooked basmati rice
  • 1 medium ripe avocado, peeled and cubed

Direction

  1. For salsa, combine all ingredients in a large bowl. Cover; refrigerate until serving.
  2. Transfer chicken to a 5- or 6-qt. slow cooker. In a small bowl, combine broth, pineapple juice, garlic, salt and pepper. Pour over chicken. Cook, covered, on high until chicken is tender, 4-5 hours.
  3. Serve over rice and top with salsa and avocado.
