Ingredients

  • lemon mustard vinaigrette:
  • 5 tablespoons extra virgin olive oil
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons finely chopped shallot
  • 2 tablespoons sprigs fresh parsley, chopped
  • 1 teaspoon Dijon mustard
  • 1 teaspoon grated lemon zest
  • 1/4 teaspoon sea salt
  • tuna salad:
  • 1 can (5 ounces) albacore white tuna in water, drained
  • 1 can (15 ounces) navy beans, rinsed and drained
  • 1/3 cup finely chopped celery
  • 2 large tomatoes, cut into 2 thick slices
  • 2 tablespoons toasted pine nuts
  • Freshly cracked pepper

Direction

  1. In a food processor or high powered blender, combine vinaigrette ingredients; process until smooth.
  2. In a large bowl, combine tuna, beans and celery. Drizzle with vinaigrette; toss to coat.
  3. Place tomato slices onto 4 plates. Divide tuna mixture over top; sprinkle with pine nuts. Garnish with fresh cracked black pepper before serving.
