Green Pea Salad

This pea salad recipe is great for summer picnics and easy to make in just 15 minutes with frozen green peas. I like to make it the night before I need it as it tastes much better if it sits overnight. My daughter and her friend will not eat peas, but they love this salad!

Ingredients

  • 1 (16 ounce) package frozen green peas

  • ½ cup chopped almonds

  • ½ cup chopped green onions

  • ½ cup cubed Cheddar cheese or crumbled feta

  • ¾ cup mayonnaise

  • 2 tablespoons balsamic vinegar

  • black pepper to taste

Direction

  1. Gather all ingredients.

  2. Place peas in a colander, and run warm water over them until they are thawed; drain and transfer into a large bowl.

  3. Toast almonds in a skillet over medium heat until nuts start to turn golden brown and become fragrant, about 3 to 5 minutes.

  4. Add almonds, green onions, cheese, and mayonnaise to peas. Stir in balsamic vinegar, and season to taste with black pepper.
