Mid-Summer Italian Bread Salad
Everything in this mid-summer Italian bread salad recipe is fresh, except the bread. Use a loaf of artisan or rosemary bread that is a touch stale
Ingredients

1 clove garlic, peeled

1 (1 pound) loaf Italian bread

2 cups chopped fresh basil

1 cup chopped tomatoes

1 cup peeled, seeded, and chopped cucumber

1 cup chopped red onion

2 tablespoons chopped fresh thyme

1 clove garlic, minced

¼ cup olive oil, or as needed

2 tablespoons balsamic vinegar, or as needed
Direction

Gather all ingredients.

Rub peeled garlic clove around a wooden salad bowl.

Pull apart or cut bread into bite-sized pieces.

Combine bread, basil, tomatoes, cucumber, red onion, thyme, and minced garlic in the prepared salad bowl.

Add olive oil and vinegar; toss until evenly coated.
